Cook the Pasta
Bring a large pot of salted water to a boil. Cook pasta until al dente. Reserve ¼ cup pasta water, then drain.
Brown the Meat
Heat olive oil in a large skillet over medium-high heat. Add ground meat and cook until browned. Drain excess fat if needed.
Build the Flavor
Add onion and garlic; cook until soft and fragrant. Stir in taco seasoning and cook 30 seconds.
Make the Sauce
Add tomato sauce and broth. Simmer 3–5 minutes until slightly thickened. Stir in cream cheese until smooth.
Combine
Add cooked pasta and shredded cheese. Stir until creamy, adding pasta water as needed.
Serve
Taste and adjust seasoning. Serve hot with desired toppings.
