Sushi Bake with Spicy Tuna & Creamy Crab

Ingredients
  

  • For the Sushi Rice
  • 2 cups short-grain sushi rice rinsed
  • cups water
  • 3 tablespoons rice vinegar
  • tablespoons sugar
  • 1 teaspoon salt
  • For the Spicy Tuna
  • cups sushi-grade tuna finely chopped (or canned tuna, drained)
  • ¼ cup mayonnaise Japanese mayo preferred
  • 1 –2 tablespoons sriracha to taste
  • For the Creamy Crab
  • cups imitation crab or real crab meat shredded
  • ¼ cup mayonnaise
  • 2 tablespoons cream cheese softened (optional)
  • For Assembly & Topping
  • 2 tablespoons furikake seasoning
  • Extra spicy mayo for drizzle
  • Green onions sliced
  • Nori sheets for serving

Method
 

  1. Cook & Season Rice
  2. Cook sushi rice according to package instructions. While warm, gently fold in rice vinegar, sugar, and salt. Let cool slightly.
  3. Prepare Spicy Tuna
  4. In a bowl, mix tuna with mayonnaise and sriracha until creamy. Adjust heat to taste.
  5. Prepare Creamy Crab
  6. Combine crab meat, mayonnaise, and cream cheese until smooth.
  7. Assemble the Bake
  8. Spread rice evenly in a lightly greased baking dish. Sprinkle with furikake. Layer spicy tuna, then creamy crab on top.
  9. Bake
  10. Bake at 375°F (190°C) for 12–15 minutes until warmed through and lightly golden.
  11. Finish & Serve
  12. Drizzle with extra spicy mayo, garnish with green onions, and serve warm with nori sheets.
