Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish.
Cook egg noodles in salted water until al dente. Drain and set aside.
Heat oil in a skillet over medium-high heat. Add ground beef and cook until browned. Drain excess fat.
Add onion and garlic; cook until soft and fragrant.
Stir in tomato sauce, salt, pepper, and paprika. Simmer 3–5 minutes.
In a bowl, stir sour cream until smooth.
Layer half the noodles in the baking dish, spread half the sour cream, then half the beef mixture. Repeat layers.
Top with shredded cheese if using.
Bake uncovered for 30–35 minutes until bubbly.
Rest 10 minutes before serving.
