Ingredients
  

  • 6 breakfast sausages pork, turkey, or chicken
  • 6 large eggs
  • 1 tbsp butter or oil
  • ¾ cup shredded cheddar or Colby Jack cheese
  • 6 soft flour tortillas or wraps
  • ¼ tsp salt
  • ¼ tsp black pepper
  • Optional: paprika or garlic powder

Method
 

  1. Cook sausages in a skillet over medium heat until fully cooked. Remove and set aside.
  2. In the same pan, melt butter and scramble eggs gently until soft and fluffy.
  3. Slice or crumble the cooked sausage and mix with the eggs.
  4. Stir in shredded cheese until melted.
  5. Lay out tortillas and divide the filling evenly.
  6. Roll tightly, tucking in the sides.
  7. Optional: toast roll-ups in a pan or bake briefly until golden.
  8. Serve warm.
