Roast sweet potatoes
Preheat oven to 400°F (200°C). Toss sweet potatoes with 1 tbsp olive oil, salt, and pepper. Spread on a baking sheet and roast for 25–30 minutes until tender and lightly caramelized.
Cook sausage
Heat remaining olive oil in a skillet over medium heat. Add sausage and cook until browned. Remove from heat.
Make honey garlic sauce
Whisk honey, garlic, soy sauce, vinegar, and red pepper flakes in a bowl.
Combine & glaze
Add roasted sweet potatoes to the skillet with sausage. Pour sauce over and cook for 2–3 minutes, stirring, until glossy and coated.
Serve
Garnish with herbs if desired and serve warm.
