Sausage and Sweet Potatoes with Honey Garlic Sauce

Ingredients

  • lb sweet potatoes peeled and cubed
  • 14 oz smoked sausage or kielbasa sliced
  • 2 tbsp olive oil
  • ½ tsp salt
  • ½ tsp black pepper
  • Honey Garlic Sauce
  • cup honey
  • 3 cloves garlic minced
  • 1 tbsp soy sauce optional, for depth
  • 1 tbsp apple cider vinegar or lemon juice
  • ¼ tsp red pepper flakes optional
  • Optional Add-Ins
  • Bell peppers or broccoli
  • Fresh thyme or rosemary

Method
 

  1. Roast sweet potatoes
  2. Preheat oven to 400°F (200°C). Toss sweet potatoes with 1 tbsp olive oil, salt, and pepper. Spread on a baking sheet and roast for 25–30 minutes until tender and lightly caramelized.
  3. Cook sausage
  4. Heat remaining olive oil in a skillet over medium heat. Add sausage and cook until browned. Remove from heat.
  5. Make honey garlic sauce
  6. Whisk honey, garlic, soy sauce, vinegar, and red pepper flakes in a bowl.
  7. Combine & glaze
  8. Add roasted sweet potatoes to the skillet with sausage. Pour sauce over and cook for 2–3 minutes, stirring, until glossy and coated.
  9. Serve
  10. Garnish with herbs if desired and serve warm.
