Queso Chicken Tacos

Ingredients
  

  • Chicken
  • 1 lb 450 g boneless, skinless chicken breasts or thighs, diced
  • 1 tbsp vegetable oil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp smoked paprika
  • ½ tsp salt
  • ¼ tsp black pepper
  • Queso Sauce
  • 1 cup prepared queso dip white or yellow
  • 2 tbsp milk as needed, to thin
  • For Serving
  • 8 small flour tortillas
  • Optional toppings: shredded lettuce diced tomatoes, red onion, jalapeños, cilantro, avocado, lime wedges

Method
 

  1. Season the Chicken
  2. Toss the chicken with garlic powder, onion powder, smoked paprika, salt, and pepper until evenly coated.
  3. Cook the Chicken
  4. Heat oil in a large skillet over medium-high heat. Add chicken and cook 6–8 minutes, stirring occasionally, until fully cooked and lightly crispy on the edges.
  5. Warm the Queso
  6. Heat queso gently in a saucepan or microwave, stirring until smooth. Add milk if needed to loosen.
  7. Combine
  8. Reduce heat to low and pour queso over the chicken. Stir gently and simmer 1–2 minutes until coated.
  9. Assemble Tacos
  10. Warm tortillas, fill with queso chicken, and add desired toppings. Serve immediately.
