Ingredients
  

  • 1 lb ground beef or ground turkey
  • 1 tbsp olive oil
  • 1 packet taco seasoning or 2 tbsp homemade
  • 2 cups beef or chicken broth
  • 1 can 14.5 oz diced tomatoes (with juices)
  • 8 oz short pasta rotini, shells, or penne
  • cups shredded cheddar or Mexican-blend cheese
  • Salt & black pepper to taste

  • Sour cream
  • Chopped green onions
  • Fresh cilantro

Method
 

  1. Heat olive oil in a large pot or deep skillet over medium heat. Add ground meat and cook until browned. Drain excess grease if needed.
  2. Stir in taco seasoning and cook for 30 seconds until fragrant.
  3. Add broth and diced tomatoes. Stir to combine.
  4. Add uncooked pasta, bring to a gentle boil, then reduce heat and simmer, stirring occasionally, until pasta is tender.
  5. Lower heat and stir in shredded cheese until melted and creamy.
  6. Taste and adjust seasoning. Serve hot with optional toppings.
