- Heat olive oil in a large pot over medium heat. Add ground beef and onion; cook until browned. Drain excess fat.
- Add garlic and cook 30 seconds. Stir in tomato paste, paprika, mustard powder, salt, and pepper.
- Pour in beef broth and milk. Stir in macaroni until mostly submerged.
- Bring to a gentle boil, then reduce heat, cover, and simmer 10–12 minutes, stirring occasionally.
- Remove from heat and stir in shredded cheddar until melted and creamy.
- Let rest 2–3 minutes before serving.
