Ingredients
  

  • 1 tbsp olive oil
  • 1 lb ground beef 80/20 or 85/15
  • 1 small onion finely diced
  • 3 cloves garlic minced
  • 2 tbsp tomato paste or ketchup
  • 1 tsp paprika
  • ½ tsp mustard powder
  • Salt and black pepper to taste
  • 2 cups beef broth low sodium
  • cups whole milk
  • 2 cups elbow macaroni uncooked
  • 2 cups sharp cheddar cheese freshly shredded

Method
 

  1. Heat olive oil in a large pot over medium heat. Add ground beef and onion; cook until browned. Drain excess fat.
  2. Add garlic and cook 30 seconds. Stir in tomato paste, paprika, mustard powder, salt, and pepper.
  3. Pour in beef broth and milk. Stir in macaroni until mostly submerged.
  4. Bring to a gentle boil, then reduce heat, cover, and simmer 10–12 minutes, stirring occasionally.
  5. Remove from heat and stir in shredded cheddar until melted and creamy.
  6. Let rest 2–3 minutes before serving.
