Mississippi Chicken

Ingredients
  

  • 2 lb 900 g boneless, skinless chicken breasts or thighs
  • 1 packet 1 oz dry ranch seasoning mix
  • ½ cup 115 g unsalted butter, cut into pieces
  • 6 –8 pepperoncini peppers
  • ¼ cup pepperoncini juice optional, for extra tang
  • ¼ tsp black pepper
  • ¼ cup heavy cream or cream cheese optional, for extra creaminess

Method
 

  1. Prepare Chicken
  2. Place chicken in a skillet, slow cooker, or baking dish in a single layer.
  3. Season
  4. Sprinkle ranch seasoning evenly over the chicken. Add black pepper.
  5. Add Butter & Peppers
  6. Scatter butter pieces and pepperoncini peppers on top. Add pepperoncini juice if using.
  7. Cook
  8. Stovetop: Cover and simmer on low for 25–30 minutes.
  9. Slow Cooker: Cook on LOW for 4–6 hours or HIGH for 2–3 hours.
  10. Oven: Cover and bake at 375°F (190°C) for 30–35 minutes.
  11. Finish
  12. Shred chicken if desired. Stir sauce gently. Add cream or cream cheese if using and simmer 2–3 minutes until silky.
  13. Serve
  14. Serve hot with your favorite sides.
