- Heat a small skillet with a drizzle of olive oil. Add spinach and cook just until wilted. Remove and gently squeeze out excess moisture.
- Lay a tortilla flat. Sprinkle mozzarella over half, then add spinach, feta, and red onion. Top with a little more mozzarella.
- Fold the tortilla in half.
- Heat a skillet over medium heat with olive oil or butter. Cook quesadilla 2–3 minutes per side until golden and crispy and cheese is melted.
- Remove, rest briefly, slice, and serve warm.
