Ingredients
  

  • Quesadillas
  • 4 large flour tortillas
  • 2 cups fresh spinach
  • 1 cup shredded low-moisture mozzarella
  • ¾ cup crumbled feta cheese
  • ½ small red onion thinly sliced
  • 1 –2 tablespoons olive oil or butter for cooking
  • Salt & black pepper to taste
  • Optional Add-Ins
  • Sun-dried tomatoes chopped
  • Kalamata olives sliced
  • Red pepper flakes

Method
 

  1. Heat a small skillet with a drizzle of olive oil. Add spinach and cook just until wilted. Remove and gently squeeze out excess moisture.
  2. Lay a tortilla flat. Sprinkle mozzarella over half, then add spinach, feta, and red onion. Top with a little more mozzarella.
  3. Fold the tortilla in half.
  4. Heat a skillet over medium heat with olive oil or butter. Cook quesadilla 2–3 minutes per side until golden and crispy and cheese is melted.
  5. Remove, rest briefly, slice, and serve warm.
