Ingredients
  

  • 2 cups mashed potatoes thick, not runny
  • 1 cup shredded cheese cheddar, mozzarella, or blend
  • 2 large eggs
  • ½ cup all-purpose flour or breadcrumbs
  • ½ tsp salt
  • ¼ tsp black pepper
  • Optional Add-Ins
  • Garlic powder
  • Chopped chives or parsley
  • Cooked bacon bits

Method
 

  1. Preheat oven
  2. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  3. Mix ingredients
  4. In a bowl, combine mashed potatoes, cheese, eggs, flour, salt, and pepper until well mixed.
  5. Shape puffs
  6. Scoop small portions and place on prepared baking sheet.
  7. Bake
  8. Bake for 18–22 minutes, until golden and crisp.
  9. Serve
  10. Let cool slightly before serving.
  11. Frying Option:
  12. Fry in hot oil (350°F / 175°C) for 3–4 minutes until golden.
