Method
- Preheat oven
- Preheat oven to 400°F (200°C). Grease a mini muffin pan or line a baking sheet.
- Mix ingredients
- In a large bowl, combine mashed potatoes, eggs, cheese, flour (or breadcrumbs), salt, pepper, and garlic powder. Mix until just combined.
- Portion
- Spoon the mixture into the prepared pan, filling each cup about ¾ full.
- Bake
- Bake for 20–25 minutes, or until puffs are set and golden on top.
- Cool & serve
- Let cool for 5 minutes before removing from the pan. Serve warm.
