Ingredients
  

  • 2 cups mashed potatoes plain, not watery
  • 2 large eggs room temperature
  • cups shredded cheese cheddar, mozzarella, or blend
  • ¼ cup all-purpose flour or breadcrumbs
  • ½ tsp salt
  • ¼ tsp black pepper
  • ½ tsp garlic powder optional
  • Cooking spray or melted butter for greasing
  • Optional Add-Ins
  • Chopped chives or parsley
  • Cooked bacon bits
  • Chili flakes or diced jalapeños

Method
 

  1. Preheat oven
  2. Preheat oven to 400°F (200°C). Grease a mini muffin pan or line a baking sheet.
  3. Mix ingredients
  4. In a large bowl, combine mashed potatoes, eggs, cheese, flour (or breadcrumbs), salt, pepper, and garlic powder. Mix until just combined.
  5. Portion
  6. Spoon the mixture into the prepared pan, filling each cup about ¾ full.
  7. Bake
  8. Bake for 20–25 minutes, or until puffs are set and golden on top.
  9. Cool & serve
  10. Let cool for 5 minutes before removing from the pan. Serve warm.
