In a bowl, mix breadcrumbs, ¼ cup Parmesan, garlic powder, and paprika.
Coat chicken evenly in the breadcrumb mixture, pressing gently to adhere.
Heat butter or oil in a skillet over medium heat.
Cook chicken 4–5 minutes per side until golden and cooked through.
Transfer chicken to the baking dish.
Top with mozzarella, provolone, and remaining Parmesan.
Bake for 8–10 minutes or until cheese is melted and bubbly.
Rest 5 minutes before serving.
