Ingredients
  

  • 4 boneless skinless chicken breasts
  • 1 cup seasoned breadcrumbs or panko
  • ½ cup grated Parmesan cheese divided
  • 1 tsp garlic powder
  • ½ tsp paprika
  • ½ tsp salt
  • ¼ tsp black pepper
  • 2 tbsp butter or olive oil
  • 1 cup shredded mozzarella cheese
  • ½ cup shredded provolone or Monterey Jack cheese

Method
 

  1. Preheat oven to 400°F (200°C). Lightly grease a baking dish.
  2. Pound chicken breasts to even thickness and season lightly with salt and pepper.
  3. In a bowl, mix breadcrumbs, ¼ cup Parmesan, garlic powder, and paprika.
  4. Coat chicken evenly in the breadcrumb mixture, pressing gently to adhere.
  5. Heat butter or oil in a skillet over medium heat.
  6. Cook chicken 4–5 minutes per side until golden and cooked through.
  7. Transfer chicken to the baking dish.
  8. Top with mozzarella, provolone, and remaining Parmesan.
  9. Bake for 8–10 minutes or until cheese is melted and bubbly.
  10. Rest 5 minutes before serving.
