Cook the Rice
Prepare rice according to package instructions. Fluff and keep warm.
Prepare the Pork
Season pork with salt and pepper. Toss lightly with cornstarch if using.
Cook the Pork
Heat oil in a large skillet over medium-high heat. Add pork in a single layer and cook until golden and cooked through. Remove and set aside.
Make the Sauce
In the same skillet, add garlic and sauté briefly. Stir in honey, soy sauce, vinegar, and sesame oil. Bring to a gentle simmer.
Thicken the Sauce
Mix cornstarch and water, then stir into the sauce. Simmer until glossy and thick.
Combine
Return pork to the skillet and toss until fully coated.
Serve
Spoon pork and sauce over rice. Garnish with green onions and sesame seeds.
