Ingredients
  

  • lb boneless skinless chicken breasts or thighs
  • 1 tbsp olive oil
  • 2 cloves garlic minced
  • ½ cup BBQ sauce your favorite
  • ¼ cup honey
  • ½ tsp salt
  • ¼ tsp black pepper
  • cups uncooked long-grain white rice
  • 3 cups water or chicken broth
  • Optional garnish: chopped green onions or parsley

Method
 

  1. Cook rice according to package instructions using water or broth; keep warm.
  2. Season chicken with salt and pepper.
  3. Heat olive oil in a skillet over medium heat. Cook chicken until golden and cooked through, 6–8 minutes per side. Remove and set aside.
  4. In the same skillet, add garlic and sauté for 30 seconds until fragrant.
  5. Stir in BBQ sauce and honey; simmer 2–3 minutes until slightly thickened.
  6. Return chicken to the skillet and coat evenly with the sauce. Simmer 3–5 minutes.
  7. Serve honey BBQ chicken over rice, spooning extra sauce on top.
  8. Garnish if desired and serve warm.
