Ingredients
  

  • For the Steak & Potatoes
  • 1 ½ lb sirloin or ribeye steak cut into bite-sized pieces
  • 1 lb baby potatoes halved
  • 2 tbsp olive oil
  • 3 tbsp unsalted butter
  • 4 cloves garlic minced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp paprika
  • 1/2 tsp dried parsley or thyme optional

Method
 

  1. Heat olive oil in a large skillet over medium heat.
  2. Add potatoes, season lightly with salt and pepper, and cook until golden and fork-tender. Remove and set aside.
  3. Increase heat to medium-high. Add steak bites in a single layer and sear until browned on all sides.
  4. Reduce heat to medium. Add butter and garlic; stir until fragrant and steak is coated.
  5. Return potatoes to the pan and toss to combine.
  6. Adjust seasoning and remove from heat. Serve hot.
