Ingredients
  

  • For the Filling
  • 2 cups cooked chicken finely shredded (rotisserie works great)
  • cups shredded Monterey Jack or cheddar cheese
  • 1 teaspoon chili powder
  • ½ teaspoon ground cumin
  • ½ teaspoon garlic powder
  • ¼ teaspoon smoked paprika
  • Salt & black pepper to taste
  • For Rolling
  • 12 small corn or flour tortillas
  • Olive oil spray or brush for crisping
  • Optional Dipping Sauces
  • Salsa roja or verde
  • Sour cream or Mexican crema
  • Guacamole

Method
 

  1. Make the Filling
  2. In a bowl, combine shredded chicken, cheese, spices, salt, and pepper. Mix until evenly combined.
  3. Warm Tortillas
  4. Heat tortillas briefly in a dry skillet or microwave (wrapped in a damp towel) until pliable.
  5. Roll Taquitos
  6. Add 2–3 tablespoons of filling near one edge of each tortilla. Roll tightly and place seam-side down.
  7. Cook (Choose One Method)
  8. Oven: Bake at 425°F (220°C) for 16–18 minutes, flipping halfway.
  9. Air Fryer: Cook at 400°F (200°C) for 8–10 minutes.
  10. Fry: Shallow-fry in hot oil until golden on all sides.
  11. Serve
  12. Cool slightly, then serve warm with dipping sauces.
