Creamy Garlic Pasta

Ingredients
  

  • 12 oz pasta spaghetti, fettuccine, or linguine
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 5 cloves garlic minced
  • 1 cup heavy cream or half-and-half
  • ¾ cup freshly grated Parmesan cheese
  • Salt and black pepper to taste
  • ½ cup reserved pasta water as needed
  • Red pepper flakes optional
  • Fresh parsley chopped (optional)

Method
 

  1. Cook the Pasta
  2. Bring a large pot of salted water to a boil. Cook pasta until al dente. Reserve ½ cup pasta water, then drain.
  3. Sauté Garlic
  4. Heat butter and olive oil in a skillet over medium-low heat. Add garlic and cook gently until fragrant.
  5. Make the Sauce
  6. Pour in cream and bring to a gentle simmer. Season with salt and pepper.
  7. Add Cheese
  8. Reduce heat and stir in Parmesan until melted and smooth.
  9. Combine
  10. Add pasta to the sauce and toss to coat. Add reserved pasta water as needed for consistency.
  11. Finish & Serve
  12. Taste and adjust seasoning. Garnish with parsley or red pepper flakes if desired.
