Season the Chicken
Season chicken with salt, pepper, and paprika on both sides.
Brown the Chicken
Heat olive oil in a large skillet over medium heat. Sear chicken for 3–4 minutes per side until lightly golden. Remove and set aside.
Build the Sauce
In the same pan, sauté onion until soft. Add garlic and ginger; cook until fragrant. Stir in curry powder and turmeric.
Simmer
Pour in coconut milk and chicken broth, scraping up browned bits. Return chicken to the pan, cover, and simmer for 20 minutes.
Finish & Serve
Stir in lime juice, adjust seasoning, garnish with herbs, and serve warm.
