Coconut Chicken

Ingredients
  

  • For the Chicken
  • lb 680 g boneless, skinless chicken thighs
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon paprika
  • For the Coconut Sauce
  • 1 tablespoon olive oil
  • 1 small onion finely chopped
  • 3 cloves garlic minced
  • 1 teaspoon fresh ginger grated
  • 1 tablespoon curry powder or mild curry blend
  • ½ teaspoon ground turmeric optional
  • 1 can 13.5 oz / 400 ml full-fat coconut milk
  • ½ cup chicken broth
  • 1 tablespoon lime juice or to taste
  • For Garnish Optional
  • Fresh cilantro or basil
  • Lime wedges

Method
 

  1. Season the Chicken
  2. Season chicken with salt, pepper, and paprika on both sides.
  3. Brown the Chicken
  4. Heat olive oil in a large skillet over medium heat. Sear chicken for 3–4 minutes per side until lightly golden. Remove and set aside.
  5. Build the Sauce
  6. In the same pan, sauté onion until soft. Add garlic and ginger; cook until fragrant. Stir in curry powder and turmeric.
  7. Simmer
  8. Pour in coconut milk and chicken broth, scraping up browned bits. Return chicken to the pan, cover, and simmer for 20 minutes.
  9. Finish & Serve
  10. Stir in lime juice, adjust seasoning, garnish with herbs, and serve warm.
