Ingredients
  

  • For the Chicken
  • lb 680 g boneless, skinless chicken thighs
  • 3 tablespoons olive oil
  • 3 tablespoons fresh lime juice
  • 3 cloves garlic minced
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • ½ teaspoon dried oregano
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • For Serving
  • 12 small corn tortillas
  • ½ cup finely diced white onion
  • ½ cup chopped fresh cilantro
  • Lime wedges for serving
  • Optional Sauces
  • Salsa roja or verde
  • Sour cream or Mexican crema
  • Hot sauce

Method
 

  1. Marinate the Chicken
  2. In a bowl, whisk olive oil, lime juice, garlic, chili powder, cumin, smoked paprika, oregano, salt, and pepper. Add chicken and toss to coat evenly. Marinate for at least 30 minutes.
  3. Cook the Chicken
  4. Heat a large skillet over medium-high heat. Add chicken in a single layer and cook for 5–7 minutes per side until cooked through and lightly charred.
  5. Rest & Slice
  6. Transfer chicken to a cutting board and rest for 5 minutes. Slice into small taco-sized pieces.
  7. Warm Tortillas
  8. Warm tortillas in a dry skillet or directly over a flame until soft and lightly blistered.
  9. Assemble
  10. Fill tortillas with chicken, then top with onion, cilantro, and a squeeze of lime. Add sauce if desired.
