Prepare bread bowls
Preheat oven to 375°F (190°C). Slice tops off bread and hollow centers, leaving sturdy walls. Mix melted butter with garlic and parsley, brush inside and out. Bake 8–10 minutes until lightly golden.
Cook chicken
Heat olive oil in a skillet over medium heat. Season chicken with salt, pepper, and Italian seasoning. Cook until golden and cooked through. Remove and set aside.
Make Alfredo sauce
In the same skillet, melt butter. Add garlic and sauté until fragrant. Pour in cream and simmer gently. Stir in Parmesan (and mozzarella if using) until smooth and creamy.
Combine
Add cooked chicken to the Alfredo sauce and stir to coat evenly.
Fill & bake
Spoon Alfredo chicken into bread bowls. Bake 8–10 minutes until hot and bubbly.
Serve
Garnish with parsley and serve immediately.
