- Boil diced potatoes in salted water until fork-tender. Drain well.
- Heat butter or oil in a skillet over medium heat. Add potatoes, salt, pepper, garlic powder, and paprika. Cook 3–4 minutes until lightly golden.
- Remove from heat and stir in shredded cheese until melted and creamy.
- Warm tortillas until soft and pliable.
- Spoon filling into tortillas, fold in sides, and roll tightly.
- Optional: Toast burritos in a dry skillet until golden on both sides.
- Serve warm with desired toppings.
