Ingredients
  

  • 4 medium russet or Yukon Gold potatoes peeled and diced
  • 2 tbsp butter or olive oil
  • 1 tsp salt adjust to taste
  • ½ tsp black pepper
  • ½ tsp garlic powder
  • ½ tsp paprika
  • –2 cups shredded cheese cheddar, Monterey Jack, or Mexican blend
  • 4 –6 large flour tortillas
  • Optional Add-Ins
  • Chopped green onions
  • Sour cream
  • Hot sauce or salsa

Method
 

  1. Boil diced potatoes in salted water until fork-tender. Drain well.
  2. Heat butter or oil in a skillet over medium heat. Add potatoes, salt, pepper, garlic powder, and paprika. Cook 3–4 minutes until lightly golden.
  3. Remove from heat and stir in shredded cheese until melted and creamy.
  4. Warm tortillas until soft and pliable.
  5. Spoon filling into tortillas, fold in sides, and roll tightly.
  6. Optional: Toast burritos in a dry skillet until golden on both sides.
  7. Serve warm with desired toppings.
