- Heat olive oil in a large skillet over medium heat. Season chicken with salt, pepper, garlic powder, and paprika.
- Cook chicken until golden on both sides. Remove and set aside.
- In the same skillet, add rice and stir for 1 minute.
- Pour in chicken broth and cream. Bring to a gentle simmer.
- Add frozen vegetables and return chicken to the pan.
- Cover and cook for 18–20 minutes, until rice is tender and chicken is fully cooked.
- Taste and adjust seasoning. Add cheese if desired.
- Serve warm.
