Ingredients
  

  • 1 lb boneless chicken thighs or breasts
  • 1 tbsp olive oil
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • ½ cup heavy cream or milk
  • 1 cup frozen mixed vegetables
  • Optional: shredded cheese for topping

Method
 

  1. Heat olive oil in a large skillet over medium heat. Season chicken with salt, pepper, garlic powder, and paprika.
  2. Cook chicken until golden on both sides. Remove and set aside.
  3. In the same skillet, add rice and stir for 1 minute.
  4. Pour in chicken broth and cream. Bring to a gentle simmer.
  5. Add frozen vegetables and return chicken to the pan.
  6. Cover and cook for 18–20 minutes, until rice is tender and chicken is fully cooked.
  7. Taste and adjust seasoning. Add cheese if desired.
  8. Serve warm.
