Cajun Cream Cheese Chicken Pasta Bake

Ingredients
  

  • For the Pasta
  • 10 oz pasta penne, rotini, or rigatoni
  • Salt for boiling water
  • For the Chicken
  • 1 lb boneless skinless chicken breasts or thighs, cubed
  • teaspoons Cajun seasoning adjust to taste
  • ½ teaspoon paprika
  • Salt & black pepper to taste
  • 1 tablespoon olive oil
  • For the Creamy Cajun Sauce
  • 2 tablespoons butter
  • 1 small onion finely diced
  • 3 cloves garlic minced
  • 8 oz cream cheese softened
  • ¾ cup heavy cream or whole milk
  • ½ cup chicken broth
  • For Topping
  • cups shredded mozzarella or cheddar cheese
  • 2 tablespoons chopped parsley or green onions optional

Method
 

  1. Cook the Pasta
  2. Boil pasta in salted water until just al dente. Drain and set aside.
  3. Cook the Chicken
  4. Season chicken with Cajun seasoning, paprika, salt, and pepper. Heat oil in a skillet over medium-high heat and cook chicken until golden and cooked through. Remove and set aside.
  5. Make the Sauce
  6. In the same skillet, melt butter. Add onion and cook until soft. Stir in garlic until fragrant. Add cream cheese, cream, and broth. Stir until smooth and creamy.
  7. Combine
  8. Add cooked pasta and chicken to the sauce. Toss until evenly coated.
  9. Bake
  10. Transfer to a greased baking dish. Top with shredded cheese. Bake at 375°F (190°C) for 20–25 minutes until bubbly and lightly golden.
  11. Serve
  12. Garnish with parsley or green onions and serve warm.
