Ingredients
  

  • Chicken
  • lb boneless skinless chicken breast or thighs, cut into bite-size pieces
  • Salt & black pepper to taste
  • Crispy Coating
  • ½ cup cornstarch
  • ½ cup all-purpose flour
  • 2 large eggs beaten
  • For Frying
  • Vegetable or peanut oil
  • Bang Bang Sauce
  • ½ cup mayonnaise
  • ¼ cup sweet chili sauce
  • 1 –2 tbsp sriracha to taste
  • 1 tsp rice vinegar or lime juice optional
  • Optional Garnish
  • Green onions
  • Sesame seeds

Method
 

  1. Prep chicken
  2. Season chicken lightly with salt and pepper.
  3. Coat
  4. Dip chicken in beaten eggs, then toss in cornstarch–flour mixture until evenly coated.
  5. Fry
  6. Heat oil to 350°F (175°C). Fry chicken in batches for 3–4 minutes, until golden and crispy. Drain on paper towels.
  7. Make sauce
  8. Whisk mayonnaise, sweet chili sauce, sriracha, and vinegar until smooth.
  9. Combine
  10. Toss crispy chicken gently with sauce or drizzle sauce over the top.
  11. Serve
  12. Garnish if desired and serve immediately.
