Dredge chicken in flour, dip into eggs, then coat evenly with seasoned panko.
Arrange chicken on the rack and lightly spray with oil.
Bake for 20–25 minutes, flipping halfway, until golden and cooked through (165°F / 74°C).
Meanwhile, heat honey, butter, hot sauce, and red pepper flakes in a small saucepan over low heat until smooth and glossy.
Drizzle hot honey over chicken just before serving.
